Easy Kid-Friendly Breakfast

I honestly can’t believe its already time to be thinking about going back to school. This has been the fastest summer ever! I have been going non-stop but have got to go and do so many things. We have gone on several trips and made so many memories! That’s what its all about!! Usually by the end of July I’m ready to get back to work. This past year was such a different year for me. I was pregnant, had the baby in December, took off 6 weeks, came back, then had surgery, and went back. I had to take off a lot last year so I’m ready for a full year! This makes my 7th year to teach Kindergarten! I have lots of new ideas and I’m ready for another great year!

I have 3 kids to get up, get dressed, fed, and dropped off at daycare and school. I have to be very organized and everything needs to be as easy and fast as possible. I’m always on the look out for easy breakfast ideas that are tasty, kid-friendly, and potentially freeze and reheat well.

My favorite thing about these are that you CAN’T mess them up! Literally. You don’t have to measure anything out just use your own judgement. The kids love helping me make these! You can use whatever ingredients you want! I try to use items that I always have in my kitchen. I like meals I can throw together and not have to make a special trip to the store.

I usually use deli ham as my meat. I always have it on hand. If I want to make it really good I will buy real bacon bits that I use in my salads as well. My kids love this part. They tear up the ham and place in the bottom of the muffin tin. Next time I will try sausage in them!

This salami is by far my FAVORITE meat to use in these or even on sandwiches!!! It’s usually only a $1 at Kroger!

Next, we add in the bacon and cheese. If I’m making them for myself I like to add in spinach or bell pepper and I only use eggwhites! So good and healthy!

Lastly, pour in the egg mixture which is just eggs, milk, salt, and pepper! I added bell pepper to half of them for me.  Then you just place in the oven and bake on 400 for 15-18 minutes until the top is golden brown and cooked through the middle.

Now you have breakfast for the week. You can place in a sealed container or back and freeze. Wrap in a papertowel to reheat. They are so yummy! My boys LOVE them!!!

Also, my son on the right doesn’t match lol I pick my battles. If he wants to wear Santa pjs in July then go for it lol He is happy!
